Creamy Mushroom Ragu
Baked Spaghetti SquashIngredients
- 3 Tbsp olive oil
- 1 onion, chopped
- 1 (16-oz) pkg sliced mushrooms
- ½ tsp salt
- ½ tsp pepper
- ½ cup white wine (or use broth)
- 1¾ cups organic vegetable broth
- 1 (8-oz) carton sour cream
- 1½ cups freshly grated Parmesan cheese
- ¼ cup chopped fresh basil
Instructions
- Heat oil in a Dutch oven over medium heat; add onion, mushrooms, salt, and pepper. Sauté 8 minutes or until mushrooms are browned.
- Add wine; cook 2 minutes or until liquid is evaporated. Add broth and sour cream; cook 3 minutes or until sauce is creamy. Stir in cheese and basil.
- Serve over Baked Spaghetti Squash recipe.
Side Dish Ingredients
- 1 (2- to 3-lb) spaghetti squash
- 3 Tbsp olive oil
- ¼ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Preheat oven to 425°F. Cut squash in half; scrape out seeds.
- Drizzle cut sides of squash with oil; sprinkle with ¼ tsp salt and ½ tsp pepper. Place squash, cut side down, in a greased baking dish.
- Bake squash 30 minutes or until fork-tender.
- Use a fork to scrape squash into spaghetti-like strands; season with salt and pepper to taste.
