Creamy Mushroom Ragu

Ingredients

  • 3 Tbsp olive oil
  • 1 onion, chopped
  • 1 (16-oz) pkg sliced mushrooms
  • ½ tsp salt
  • ½ tsp pepper
  • ½ cup white wine (or use broth)
  • 1¾ cups organic vegetable broth
  • 1 (8-oz) carton sour cream
  • 1½ cups freshly grated Parmesan cheese
  • ¼ cup chopped fresh basil

Instructions

  1. Heat oil in a Dutch oven over medium heat; add onion, mushrooms, salt, and pepper. Sauté 8 minutes or until mushrooms are browned.
  2. Add wine; cook 2 minutes or until liquid is evaporated. Add broth and sour cream; cook 3 minutes or until sauce is creamy. Stir in cheese and basil.
  3. Serve over Baked Spaghetti Squash recipe.

Side Dish Ingredients

  • 1 (2- to 3-lb) spaghetti squash
  • 3 Tbsp olive oil
  • ¼ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Preheat oven to 425°F. Cut squash in half; scrape out seeds.
  2. Drizzle cut sides of squash with oil; sprinkle with ¼ tsp salt and ½ tsp pepper. Place squash, cut side down, in a greased baking dish.
  3. Bake squash 30 minutes or until fork-tender.
  4. Use a fork to scrape squash into spaghetti-like strands; season with salt and pepper to taste.
