Chicken Spanakopita Pasta

Ingredients
- 2 (8-oz) pouches ready penne pasta
- 1 (16-oz) pkg refrigerated flame grilled chicken breast strips
- 1 (8-oz) container chopped onion
- 2 Tbsp jarred minced garlic
- ½ tsp crushed red pepper
- 2 Tbsp olive oil
- 2 (10-oz) pkg spinach
- 2 cups heavy cream
- 1 tsp dried oregano
- 1 cup shredded Parmesan cheese
- 1 (6-oz) pkg crumbled feta cheese
Instructions
- Cook pasta according to package directions; keep warm. Heat chicken according to package directions.
- Meanwhile, cook onion, garlic, and red pepper in hot oil in a large skillet or Dutch oven over medium heat 5 minutes, stirring often.
- Gradually add spinach, stirring until wilted. Add cream and oregano; bring to a boil, reduce heat, and simmer 5 minutes or until slightly thickened. Gradually stir in Parmesan.
- Toss with hot cooked pasta and chicken in a large bowl; sprinkle with feta. Season with salt and pepper to taste, if desired.
