Ingredients

  • 2 (8-oz) pouches ready penne pasta
  • 1 (16-oz) pkg refrigerated flame grilled chicken breast strips
  • 1 (8-oz) container chopped onion
  • 2 Tbsp jarred minced garlic
  • ½ tsp crushed red pepper
  • 2 Tbsp olive oil
  • 2 (10-oz) pkg spinach
  • 2 cups heavy cream
  • 1 tsp dried oregano
  • 1 cup shredded Parmesan cheese
  • 1 (6-oz) pkg crumbled feta cheese

Instructions

  1. Cook pasta according to package directions; keep warm. Heat chicken according to package directions.
  2. Meanwhile, cook onion, garlic, and red pepper in hot oil in a large skillet or Dutch oven over medium heat 5 minutes, stirring often.
  3. Gradually add spinach, stirring until wilted. Add cream and oregano; bring to a boil, reduce heat, and simmer 5 minutes or until slightly thickened. Gradually stir in Parmesan.
  4. Toss with hot cooked pasta and chicken in a large bowl; sprinkle with feta. Season with salt and pepper to taste, if desired.
