Ingredients

  • 2 (8.8-oz) pouches microwavable whole-grain brown rice
  • 3 Tbsp butter, softened
  • 2½ tsp curry powder
  • 6 (6-oz) salmon fillets
  • ⅓ cup white wine
  • 2 Tbsp fresh lemon juice
  • 1 (12-oz) pkg broccoli florets
  • 2 Tbsp ginger paste
  • 1 Tbsp olive oil (or use dark sesame oil)
  • ½ cup whole natural almonds, coarsely chopped

Instructions

  1. Cook rice according to package directions.
  2. Blend butter and curry powder in a small bowl. Arrange fillets in an 11-x 7-inch baking dish or any microwavable dish; smear curry butter on fillets. Pour wine into dish; drizzle lemon juice over fillets.
  3. Cover and microwave at HIGH 10 to 12 minutes or until fish flakes with a fork. Cool slightly; season with salt and pepper, if desired. Flake into 3-inch chunks.
  4. Cook broccoli according to package directions. Cool and chop any large pieces.
  5. Cook ginger paste in hot oil in a large skillet over medium heat 30 seconds. Add broccoli and rice. Cook 1 to 2 minutes. Season with salt and pepper, if desired.
  6. Serve salmon and broccoli rice in bowls. Sprinkle with nuts.
