Salmon-Rice Bowls

Ingredients
- 2 (8.8-oz) pouches microwavable whole-grain brown rice
- 3 Tbsp butter, softened
- 2½ tsp curry powder
- 6 (6-oz) salmon fillets
- ⅓ cup white wine
- 2 Tbsp fresh lemon juice
- 1 (12-oz) pkg broccoli florets
- 2 Tbsp ginger paste
- 1 Tbsp olive oil (or use dark sesame oil)
- ½ cup whole natural almonds, coarsely chopped
Instructions
- Cook rice according to package directions.
- Blend butter and curry powder in a small bowl. Arrange fillets in an 11-x 7-inch baking dish or any microwavable dish; smear curry butter on fillets. Pour wine into dish; drizzle lemon juice over fillets.
- Cover and microwave at HIGH 10 to 12 minutes or until fish flakes with a fork. Cool slightly; season with salt and pepper, if desired. Flake into 3-inch chunks.
- Cook broccoli according to package directions. Cool and chop any large pieces.
- Cook ginger paste in hot oil in a large skillet over medium heat 30 seconds. Add broccoli and rice. Cook 1 to 2 minutes. Season with salt and pepper, if desired.
- Serve salmon and broccoli rice in bowls. Sprinkle with nuts.
