Lemony Almond Fish Sticks

Ingredients

  • 2 lb cod fillets, cut into 1-inch-thick strips
  • 1 tsp salt
  • 1 tsp pepper
  • 2 egg whites, lightly beaten
  • ¼ cup fresh lemon juice
  • ½ cup finely chopped almonds
  • ½ cup almond flour
  • 1 tsp lemon-pepper seasoning

Instructions

  1. Preheat oven to 350°F. Season fish with salt and pepper.
  2. Whisk together egg whites and juice in a shallow bowl. Combine nuts, flour, and lemon-pepper in a second shallow bowl.
  3. Dip fish in egg; dredge in nut mixture. Place on a lightly greased wire rack on a large baking sheet.
  4. Bake 15 minutes or until fish flakes with a fork.

Side Dish Ingredients

  • 2 lb sweet potatoes, cut into matchstick pieces
  • 2 Tbsp coconut oil, melted
  • 2 tsp smoked paprika
  • 1½ tsp pepper
  • 1 tsp garlic salt

Side Dish Instructions

  1. Preheat oven to 350°F. Toss together all ingredients in a large bowl. Arrange on a rimmed baking sheet.
  2. Bake 25 to 30 minutes or until browned and tender, turning once.
