Barbecue Pork Salad
Ingredients
- 1 cup barbecue sauce
- 1 cup Ranch dressing
- 2 (1-lb) pork tenderloins
- 2½ Tbsp barbecue seasoning
- 2 Tbsp olive oil
- 1 (10-oz) pkg chopped romaine lettuce
- 3 Roma tomatoes, sliced
- 1 cucumber, cut into half-moons
- 1 (8-oz) pkg shredded Cheddar cheese
- 6 green onions, chopped
Instructions
- Stir together barbecue sauce and Ranch dressing; set aside.
- Meanwhile, cut pork into 1-inch cubes; sprinkle with seasoning. Cook pork in hot oil in a large nonstick skillet over medium-high heat 10 to 15 minutes or until done.
- Divide lettuce among 6 plates. Top with pork, tomatoes, cucumber, and cheese. Serve with dressing, and top with onions.
