Barbecue Pork Salad

Ingredients

  • 1 cup barbecue sauce
  • 1 cup Ranch dressing
  • 2 (1-lb) pork tenderloins
  • 2½ Tbsp barbecue seasoning
  • 2 Tbsp olive oil
  • 1 (10-oz) pkg chopped romaine lettuce
  • 3 Roma tomatoes, sliced
  • 1 cucumber, cut into half-moons
  • 1 (8-oz) pkg shredded Cheddar cheese
  • 6 green onions, chopped

Instructions

  1. Stir together barbecue sauce and Ranch dressing; set aside.
  2. Meanwhile, cut pork into 1-inch cubes; sprinkle with seasoning. Cook pork in hot oil in a large nonstick skillet over medium-high heat 10 to 15 minutes or until done.
  3. Divide lettuce among 6 plates. Top with pork, tomatoes, cucumber, and cheese. Serve with dressing, and top with onions.
