Salmon-Orzo Salad
Ingredients
- 1½ cups orzo
- 6 cups green beans, cut into 2-inch pieces
- 1½ lb skinless salmon fillets
- ⅔ cup plus 2 Tbsp refrigerated lemon vinaigrette, divided
- ½ tsp pepper
- 3 cups grape tomatoes
- ½ cup thinly sliced red onion
- 1 cup crumbled feta cheese
- 3 Tbsp chopped fresh dill
Instructions
- Preheat broiler. Cook orzo according to package directions, adding green beans during last 4 minutes of cooking. Drain and run under cold water to cool.
- Meanwhile, place salmon on a foil-lined baking sheet coated with cooking spray. Drizzle with 2 Tbsp vinaigrette; sprinkle with pepper. Broil 7 to 9 minutes or until fish flakes with a fork.
- Combine orzo mixture, tomatoes, onion, cheese, and ⅔ cup vinaigrette in a bowl. Flake fish into large pieces, and arrange over orzo mixture; sprinkle with dill.
