Fajita Chicken Salad
Ingredients
- 1½ lb boneless, skinless chicken breasts
- ½ (1-oz) envelope taco seasoning mix
- 1 red onion, thinly sliced
- 2 green bell peppers, thinly sliced
- 2 Tbsp olive oil
- 2 romaine lettuce hearts
- 2 Roma tomatoes, sliced
- 2 avocados, sliced
- 1 (4.5-oz) pkg chili-lime tortilla strips
- 1 (9-oz) bottle creamy salsa verde
Instructions
- Cut chicken into thin slices, and sprinkle with seasoning.
- Cook chicken, onion, and bell peppers in hot oil in a large skillet over medium heat until chicken is done and vegetables are tender.
- Chop romaine, and divide among 6 plates. Top with chicken mixture, tomatoes, avocado, and tortilla strips. Drizzle with desired amount of salsa verde.
