Fajita Chicken Salad

Ingredients

  • 1½ lb boneless, skinless chicken breasts
  • ½ (1-oz) envelope taco seasoning mix
  • 1 red onion, thinly sliced
  • 2 green bell peppers, thinly sliced
  • 2 Tbsp olive oil
  • 2 romaine lettuce hearts
  • 2 Roma tomatoes, sliced
  • 2 avocados, sliced
  • 1 (4.5-oz) pkg chili-lime tortilla strips
  • 1 (9-oz) bottle creamy salsa verde

Instructions

  1. Cut chicken into thin slices, and sprinkle with seasoning.
  2. Cook chicken, onion, and bell peppers in hot oil in a large skillet over medium heat until chicken is done and vegetables are tender.
  3. Chop romaine, and divide among 6 plates. Top with chicken mixture, tomatoes, avocado, and tortilla strips. Drizzle with desired amount of salsa verde.
