Lemon-Basil Grouper
Roasted Squash and TomatoesIngredients
- 2 (6-oz) grouper fillets
- 2 Tbsp olive oil, divided
- ¼ tsp salt, divided
- ¼ tsp pepper, divided
- 1 lemon
- 1 small shallot, minced
- 1 tsp chopped fresh basil (or use ¼ tsp dried)
- 1 tsp white balsamic vinegar
- 1 tsp Dijon mustard
- ½ tsp honey
Instructions
- Preheat oven to 400°F. Place fish on a greased baking sheet; rub with 1 tsp oil, and sprinkle with ⅛ tsp each salt and pepper. Bake 10 to 12 minutes or until fish flakes with a fork.
- Meanwhile, grate zest and squeeze juice from lemon. Whisk together 5 tsp oil, lemon zest, lemon juice, shallot, basil, vinegar, mustard, honey, and ⅛ tsp each salt and pepper. Spoon over fish.

- ½ (1½-lb) pkg sliced zucchini, yellow squash, and onion medley
- 1 cup grape tomatoes
- 1 Tbsp olive oil
- 1 clove garlic, minced
- ⅛ tsp salt
- Dash of crushed red pepper
Side Dish Instructions
- Preheat oven to 400°F. Toss together zucchini medley, tomatoes, oil, and garlic on a greased rimmed baking sheet; spread in a single layer. Sprinkle with salt and red pepper.
- Bake 15 minutes; stir and bake 5 minutes longer.
