Lemon-Basil Grouper

Ingredients

  • 2 (6-oz) grouper fillets
  • 2 Tbsp olive oil, divided
  • ¼ tsp salt, divided
  • ¼ tsp pepper, divided
  • 1 lemon
  • 1 small shallot, minced
  • 1 tsp chopped fresh basil (or use ¼ tsp dried)
  • 1 tsp white balsamic vinegar
  • 1 tsp Dijon mustard
  • ½ tsp honey

Instructions

  1. Preheat oven to 400°F. Place fish on a greased baking sheet; rub with 1 tsp oil, and sprinkle with ⅛ tsp each salt and pepper. Bake 10 to 12 minutes or until fish flakes with a fork.
  2. Meanwhile, grate zest and squeeze juice from lemon. Whisk together 5 tsp oil, lemon zest, lemon juice, shallot, basil, vinegar, mustard, honey, and ⅛ tsp each salt and pepper. Spoon over fish.

  • ½ (1½-lb) pkg sliced zucchini, yellow squash, and onion medley
  • 1 cup grape tomatoes
  • 1 Tbsp olive oil
  • 1 clove garlic, minced
  • ⅛ tsp salt
  • Dash of crushed red pepper

Side Dish Instructions

  1. Preheat oven to 400°F. Toss together zucchini medley, tomatoes, oil, and garlic on a greased rimmed baking sheet; spread in a single layer. Sprinkle with salt and red pepper.
  2. Bake 15 minutes; stir and bake 5 minutes longer.
