Ingredients

  • 8 slices bacon
  • 1½ lb boneless, skinless chicken thighs, cubed
  • 1½ tsp Cajun seasoning
  • 4 green onions, thinly sliced

Instructions

  1. Cook bacon in a large skillet over medium-high heat 6 minutes or until crisp. Remove from skillet, reserving drippings in skillet. Crumble bacon.
  2. Sprinkle chicken with seasoning. Cook in drippings 5 to 6 minutes per side or until done. Sprinkle with bacon and onions. Serve over Dirty "Rice" Pilaf recipe, if desired.

Side Dish Ingredients

  • 1½ (20-oz) pkg frozen riced cauliflower
  • 3 Tbsp olive oil
  • ½ lb ground pork sausage
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 stalks celery, chopped
  • 2 cloves garlic, minced
  • 2 tsp Cajun seasoning (or use Old Bay seasoning)
  • 4 green onions, chopped

Side Dish Instructions

  1. Cook cauliflower according to package directions; drain.
  2. Heat oil in a large skillet over medium-high heat. Cook sausage, onion, bell pepper, celery, and garlic in hot oil 5 to 6 minutes or until sausage is browned and crumbly.
  3. Add cauliflower and seasoning; cook 3 minutes or until browned. Stir in green onions.
