Cajun-Bacon Chicken

Ingredients
- 8 slices bacon
- 1½ lb boneless, skinless chicken thighs, cubed
- 1½ tsp Cajun seasoning
- 4 green onions, thinly sliced
Instructions
- Cook bacon in a large skillet over medium-high heat 6 minutes or until crisp. Remove from skillet, reserving drippings in skillet. Crumble bacon.
- Sprinkle chicken with seasoning. Cook in drippings 5 to 6 minutes per side or until done. Sprinkle with bacon and onions. Serve over Dirty "Rice" Pilaf recipe, if desired.
Side Dish Ingredients
- 1½ (20-oz) pkg frozen riced cauliflower
- 3 Tbsp olive oil
- ½ lb ground pork sausage
- 1 onion, chopped
- 1 green bell pepper, chopped
- 2 stalks celery, chopped
- 2 cloves garlic, minced
- 2 tsp Cajun seasoning (or use Old Bay seasoning)
- 4 green onions, chopped
Side Dish Instructions
- Cook cauliflower according to package directions; drain.
- Heat oil in a large skillet over medium-high heat. Cook sausage, onion, bell pepper, celery, and garlic in hot oil 5 to 6 minutes or until sausage is browned and crumbly.
- Add cauliflower and seasoning; cook 3 minutes or until browned. Stir in green onions.
