Ingredients
- 1 (8.8-oz) pouch microwavable long-grain rice
- ¾ lb boneless, skinless chicken breasts, thinly sliced
- ½ (1-oz) envelope taco seasoning mix
- ½ onion, thinly sliced
- 1 green bell pepper, thinly sliced
- ⅔ cup frozen whole kernel corn
- 1 Tbsp olive oil
- ¾ cup drained and rinsed canned pinto beans
- 1 cup shredded Cheddar cheese
- ½ cup refrigerated salsa
- ¼ cup sour cream
Instructions
- Heat rice according to package directions.
- Meanwhile, sprinkle chicken with taco seasoning. Cook chicken, onion, bell pepper, and corn in hot oil in a large skillet over medium-high heat until chicken is done and vegetables are tender. Add beans; cook 2 minutes.
- Layer rice, chicken mixture, and cheese in 2 bowls. Top with salsa and sour cream.
