Bacon, Kale, and Tomato Scramble

Ingredients
- 8 slices center cut bacon
- 1 (5-oz) pkg baby kale
- ¼ cup finely chopped onion
- 1 tomato, chopped
- 8 large eggs, lightly beaten
- ½ tsp pepper
- ¼ tsp salt
Instructions
- Cook bacon in a large nonstick skillet over medium heat 6 minutes or until crisp. Drain, reserving 1 Tbsp drippings in skillet. Crumble bacon.
- Add kale and onion to skillet with drippings; cook 3 to 4 minutes or until kale wilts. Add tomato to skillet; cook 2 minutes.
- Add eggs; cook 2 minutes, stirring constantly.
- Stir in bacon, pepper, and salt; cook, stirring constantly, until eggs are thickened and set.
