Herbed Mushroom and Goat Cheese Flank Steak

Ingredients
- ½ lb flank steak, trimmed
- ⅛ tsp salt
- ⅛ tsp pepper
- 2 tsp olive oil, divided
- 1 (8-oz) pkg sliced mushrooms
- 2 tsp minced garlic
- ⅓ cup low-sodium chicken broth
- ¼ cup heavy cream
- ¼ cup crumbled goat cheese
- 1 Tbsp chopped fresh basil
Instructions
- Sprinkle steak with salt and pepper. Cook in 1 tsp hot oil in a cast-iron or nonstick skillet over medium-high heat 4 to 5 minutes per side or to desired doneness. Let stand 5 minutes; thinly slice across the grain.
- Meanwhile, cook mushrooms in 1 tsp hot oil in a large skillet over medium-high heat 6 minutes or until lightly browned. Add garlic; cook 1 minute.
- Reduce heat to medium. Stir in broth, cream, goat cheese, and basil; cook 2 to 3 minutes or until thickened. Serve sauce with steak.

- ¼ tsp pepper, divided
- 1 (12-oz) pkg green beans
Side Dish Instructions
- Preheat oven to 425°F. Toss together potatoes, oil, basil, and ⅛ tsp each salt and pepper on a rimmed baking sheet; spread in a single layer.
- Bake 20 minutes or until potatoes are browned and tender, stirring after 10 minutes.
- Meanwhile, cook beans according to package directions. Sprinkle with ⅛ tsp each salt and pepper.
