Green Goddess Shrimp Scampi
Toast and AsparagusIngredients
- 3 Tbsp butter
- 2 Tbsp olive oil
- 2 Tbsp jarred minced garlic
- ⅔ cup white wine (or use broth)
- ½ tsp pepper
- 2 lb peeled and deveined, large raw shrimp
- 2 Tbsp fresh lemon juice
- ¼ cup chopped fresh flat-leaf parsley
- ¼ cup chopped fresh chives
- ½ tsp dried tarragon
- 1½ cups shaved Parmesan cheese
Instructions
- Melt butter with oil in a large skillet over medium heat. Add garlic; cook 1 minute or until fragrant.
- Stir in wine and pepper; bring to a simmer, and cook 3 minutes. Add shrimp to skillet. Cook 3 to 4 minutes or until shrimp turn pink.
- Stir in lemon juice, parsley, chives, and tarragon. Sprinkle with cheese. Serve shrimp on toast, if desired.

- 1 (14-oz) loaf sliced French bread
- 2 Tbsp butter, softened
- ¼ cup olive oil, divided
- 1 Tbsp jarred minced garlic
- 1 lb asparagus, trimmed
- 1 tsp salt
- ½ tsp pepper
Side Dish Instructions
- Preheat oven to 425°F. Preheat a grill pan to medium-high heat. Arrange bread slices on a large baking sheet.
- Stir together butter, 2 Tbsp oil, and garlic in a small bowl. Spread on bread. Bake 4 minutes or until crusty and browned.
- Toss together asparagus, 2 Tbsp oil, salt, and pepper in a baking dish.
- Grill asparagus 4 minutes per side or until tender and grill marks appear.
