Ingredients

  • 1½ cups panko breadcrumbs
  • ¾ cup freshly grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 2 large eggs
  • 6 (6-oz) boneless, skinless chicken breasts
  • ½ tsp garlic powder
  • ½ tsp pepper
  • ¼ tsp salt
  • 1½ cups marinara sauce
  • 6 (0.67-oz) slices mozzarella cheese

Instructions

  1. Preheat oven to 425°F. Combine breadcrumbs, cheese, and Italian seasoning in a shallow bowl. Lightly beat eggs in another shallow bowl.
  2. Sprinkle chicken with garlic powder, pepper, and salt. Dip chicken in beaten egg, and dredge in breadcrumb mixture, pressing gently to adhere. Place chicken on a greased wire rack on a rimmed baking sheet.
  3. Bake 18 to 20 minutes. Top with marinara and mozzarella. Bake 2 to 3 minutes longer or until cheese melts.

  1. Preheat oven to 400°F. Toss asparagus with oil, salt, and pepper on a greased rimmed baking sheet; spread in a single layer.
  2. Bake 10 minutes or until crisp-tender. Sprinkle with cheese.
