Bell Pepper Nachos

Ingredients
- 2 red bell peppers, cut into 1-inch thick slices
- 2 green bell peppers, cut into 1-inch thick slices
- 2 yellow bell peppers, cut into 1-inch thick slices
- 2 lb ground beef
- ½ cup water
- 2 Tbsp chili powder
- 1 Tbsp ground cumin
- 1 tsp smoked paprika
- 1 tsp salt
- ½ tsp pepper
- 2 cups shredded Monterey Jack cheese
- ¼ cup chopped fresh cilantro
Instructions
- Preheat oven to 400°F. Divide peppers, skin side down, between 2 parchment paper-lined baking sheets.
- Cook beef, water, chili powder, cumin, paprika, salt, and pepper in a large, deep skillet over medium heat until beef is browned and crumbly. Spoon 1 Tbsp beef onto each pepper; sprinkle with cheese.
- Bake 10 to 15 minutes or until cheese is melted. Top with cilantro.
