Ingredients

  • 1 (9-oz) pkg refrigerated linguine
  • ¼ cup butter, divided
  • ¾ lb chicken breast strips
  • 1 Tbsp Cajun seasoning
  • 1 cup sliced mushrooms
  • ½ (14.4-oz) pkg frozen tricolor pepper and onion medley
  • 1 cup heavy cream
  • ½ tsp dried basil
  • ¾ cup shredded Parmesan cheese, divided

Instructions

  1. Cook linguine according to package directions.
  2. Meanwhile, melt 2 Tbsp butter in a nonstick skillet over medium-high heat. Add chicken; sprinkle with seasoning. Cook 10 to 15 minutes or until done, stirring twice. Remove chicken from skillet; keep warm.
  3. Add 2 Tbsp butter and mushrooms to same skillet. Cook over medium-high heat 4 minutes.
  4. Meanwhile, cook pepper and onion medley according to package directions in microwave; drain well.
  5. Add heavy cream and basil to mushrooms in skillet. Cook over medium-high heat 4 to 5 minutes or until slightly thickened. Return chicken to skillet; cook 2 minutes.
  6. Toss together chicken mixture, hot cooked pasta, pepper and onion medley, and ½ cup cheese in a large bowl. Top with ¼ cup cheese. If desired, season with salt and pepper to taste.

  • 6 thin breadsticks

  1. Serve breadsticks with pasta.
