Ingredients
- 1 (9-oz) pkg refrigerated linguine
- ¼ cup butter, divided
- ¾ lb chicken breast strips
- 1 Tbsp Cajun seasoning
- 1 cup sliced mushrooms
- ½ (14.4-oz) pkg frozen tricolor pepper and onion medley
- 1 cup heavy cream
- ½ tsp dried basil
- ¾ cup shredded Parmesan cheese, divided
Instructions
- Cook linguine according to package directions.
- Meanwhile, melt 2 Tbsp butter in a nonstick skillet over medium-high heat. Add chicken; sprinkle with seasoning. Cook 10 to 15 minutes or until done, stirring twice. Remove chicken from skillet; keep warm.
- Add 2 Tbsp butter and mushrooms to same skillet. Cook over medium-high heat 4 minutes.
- Meanwhile, cook pepper and onion medley according to package directions in microwave; drain well.
- Add heavy cream and basil to mushrooms in skillet. Cook over medium-high heat 4 to 5 minutes or until slightly thickened. Return chicken to skillet; cook 2 minutes.
- Toss together chicken mixture, hot cooked pasta, pepper and onion medley, and ½ cup cheese in a large bowl. Top with ¼ cup cheese. If desired, season with salt and pepper to taste.
