Crispy Bang Bang Tofu

Ingredients
- 1 (14-oz) pkg extra-firm tofu, drained
- 3 Tbsp vegetable oil, divided
- 1 (12-oz) pkg frozen shelled edamame
- 3 cups shredded carrots
- ¼ cup sweet chili sauce
- ¼ cup olive-oil mayonnaise
- 2 Tbsp Sriracha hot sauce
- 1 Tbsp honey
Instructions
- Place tofu on several layers of paper towels. Cover with paper towels, and gently press out moisture. Cut into cubes.
- Cook tofu in 2 Tbsp hot oil, in batches if necessary, in a large skillet over medium heat 15 minutes or until browned on all sides.
- Meanwhile, cook edamame and carrots in 1 Tbsp hot oil in a large skillet over medium-high heat 6 minutes or until tender.
- Stir together chili sauce, mayonnaise, Sriracha, and honey.
- Serve tofu and vegetables over Sesame Brown Rice recipe; drizzle with sauce.
Side Dish Ingredients
- 2 (8.8-oz) pouches microwavable brown rice
- 1½ tsp low-sodium soy sauce
- 1 tsp dark sesame oil
Side Dish Instructions
- Cook rice according to package directions. Stir in soy sauce and sesame oil.
