Ingredients

  • 1½ lb boneless, skinless chicken breasts
  • 2 Tbsp olive oil
  • ½ cup packed brown sugar
  • ¼ cup butter, melted
  • 3 Tbsp ketchup
  • 2 Tbsp Dijon mustard
  • 1 Tbsp Worcestershire sauce

Instructions

  1. Preheat oven to 400°F. Cut chicken in half lengthwise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet; sprinkle with salt and pepper, if desired.
  2. Cook chicken in hot oil in a large ovenproof skillet over medium-high heat 3 minutes per side or until browned.
  3. Stir together brown sugar and remaining ingredients; pour over chicken. Transfer skillet to oven, and bake 15 minutes or until chicken is done.

  • 2 lb small red potatoes, quartered
  • ¼ cup olive oil
  • ⅓ cup grated Parmesan cheese
  • 1½ tsp Italian seasoning
  • ½ tsp salt, divided
  • ½ tsp pepper, divided
  • 2 (12-oz) pkg frozen green beans

Side Dish Instructions

  1. Preheat oven to 400°F. Toss potatoes with oil, cheese, seasoning, and ¼ tsp each salt and pepper on a lightly greased rimmed baking sheet; spread in a single layer.
  2. Bake 25 to 30 minutes or until browned and tender.
  3. Cook green beans according to package directions. Sprinkle with ¼ tsp each salt and pepper.
