Sausage Breakfast Biscuits

Parmesan Grits and Fruit Salad

Ingredients

  • ½ lb ground sausage
  • 6 large eggs, divided
  • 2 Tbsp butter
  • 1 (16.3-oz) can refrigerated flaky-layer biscuits
  • 1 cup shredded Cheddar cheese, divided

Instructions

  1. Preheat oven to 350ºF. Cook sausage in a large skillet over medium heat until browned and crumbly. Drain, and wipe skillet clean.
  2. Whisk together 5 eggs in a bowl until blended. Melt butter in same large skillet over medium heat; add eggs to skillet and cook, without stirring, until beginning to set on bottom. Cook, stirring constantly, until thickened and set. Remove from skillet, and let cool 10 minutes.
  3. Meanwhile, roll each biscuit into a 6-inch circle.
  4. Divide sausage, scarmbled eggs, and ½ cup cheese among centers of rolled out biscuits. Pull up edges and pinch to seal, completely enclosing filling.
  5. Place seam side down on a lightly greased baking sheet. Lightly beat remaining egg in a bowl; brush over biscuit bundles.
  6. Bake 15 minutes. Sprinkle with remaining cheese. Bake 5 minutes longer or until golden brown.

  • 1½ cups quick-cooking grits
  • ¾ cup shredded Parmesan cheese
  • 2 Tbsp butter
  • 1 (2-lb) container deli fruit salad

Side Dish Instructions

  1. Cook grits according to package directions; stir in cheese and butter until melted. Season with salt and pepper, if desired.
  2. Serve fruit on each plate.
