Cherry Cola Pulled Pork Sandwiches

Ingredients

  • 2½ lb boneless Boston butt pork roast
  • 2 (12-oz) bottles cherry cola soft drink
  • ½ cup ketchup
  • ¼ cup packed brown sugar
  • 3 Tbsp Worcestershire sauce
  • 2 Tbsp Dijon mustard
  • 6 hamburger buns

Instructions

  1. Place roast in a lightly greased 5- to 7-quart slow cooker; pour cola over pork. Cover and cook on LOW 8 to 10 hours or until pork is tender.
  2. Remove pork from cooker and shred with 2 forks, discarding fat.
  3. Meanwhile, bring liquid from cooker to a boil in a saucepan over medium-high heat; add ketchup, sugar, Worcestershire sauce, and mustard. Boil until thickened. Toss shredded pork with sauce and serve on buns.

Side Dish Ingredients

  • 1 (16-oz) pkg tricolor coleslaw
  • 2 Granny Smith apples, cut into matchsticks
  • 3 Tbsp olive oil
  • 3 Tbsp white wine vinegar
  • 2 Tbsp honey
  • 1 (32-oz) pkg frozen French fries

Side Dish Instructions

  1. Toss together coleslaw, apples, oil, vinegar, and honey in a large bowl; season with salt and pepper, if desired.
  2. Bake fries according to package directions. Season with salt and pepper, if desired.
