Sweet Italian Sausage with Peppers and Onions
Cheesy Cauliflower Mash
Ingredients
- 3 links lean sweet Italian turkey sausage
- 1 Tbsp olive oil
- 1 (14.4-oz) pkg frozen tricolor pepper and onion medley
- 1 clove garlic, minced
- ¾ cup canned diced tomatoes
- ½ tsp Italian seasoning
- ⅛ tsp pepper
- ⅛ tsp salt
Instructions
- Cook sausage in hot oil in a large skillet over medium heat 6 minutes or until browned, turning occasionally. Remove from heat; keep warm.
- Add vegetables and garlic to skillet; sauté 5 minutes or until tender. Stir in tomatoes, seasoning, pepper, and salt; return sausages to skillet. Cover and simmer 8 to 10 minutes or until sausage is done.
Side Dish Ingredients
- ½ (20-oz) pkg frozen mashed cauliflower
- 6 Tbsp shredded sharp Cheddar cheese
- 1 green onion, chopped
- ½ Tbsp butter
Side Dish Instructions
- Microwave cauliflower according to package directions. Stir in cheese, onion, and butter.
