Mushroom and Cauliflower Pork

Ingredients
- ½ (12-oz) pkg cauliflower florets
- 1 lb boneless center cut pork loin chops
- ¼ tsp salt
- ¼ tsp pepper
- 2 Tbsp butter
- 1 (8-oz) pkg sliced mushrooms
- ½ onion, chopped
- 2 cloves garlic, minced
- ¼ cup low-sodium chicken broth (or use vegetable broth)
- ½ tsp dried thyme
Instructions
- Cook cauliflower according to package directions.
- Sprinkle pork with salt and pepper. Cook pork in a nonstick skillet coated with cooking spray over medium-high heat 4 to 5 minutes per side or until done.
- Meanwhile, melt butter in another skillet. Add mushrooms, onion, and garlic; cook 8 minutes or until browned. Add cauliflower, pork, broth, and thyme; cook 2 minutes or until thoroughly heated.

- ¾ tsp dried thyme
Side Dish Instructions
- Cook potatoes according to package directions. Transfer to a bowl; stir in thyme.
