Cheesy Sausage and Tomato Soup

Ingredients

  • 1 lb ground pork sausage
  • ½ small onion, thinly sliced
  • 1 tsp garlic salt
  • 2 Tbsp olive oil
  • 1 tsp Italian seasoning
  • 4 Roma tomatoes, diced
  • ½ (8-oz) block cream cheese
  • 1½ cups low-sodium chicken broth
  • 1½ cups heavy cream
  • ½ cup freshly shredded Parmesan cheese

Instructions

  1. Cook sausage, onion, and garlic salt in hot oil in a large Dutch oven over medium-high heat 5 to 7 minutes or until sausage is browned.
  2. Add seasoning, tomatoes, and cream cheese; stir until cheese melts, about 2 to 3 minutes.
  3. Stir in broth and cream; bring to a boil, and simmer 15 to 20 minutes over low heat. Divide soup among 6 bowls; sprinkle with Parmesan cheese.
