Turmeric-and Honey-Glazed Chicken

Ingredients
- 2 lb boneless, skinless chicken thighs, cubed
- ½ tsp salt
- ¼ tsp pepper
- 2 Tbsp olive oil
- ¼ cup honey
- 3 Tbsp low-sodium soy sauce
- 1 Tbsp minced garlic
- 1 tsp ground turmeric
- 1 cup brown basmati rice, rinsed (or use other rice)
Instructions
- Sprinkle chicken thighs with salt and pepper. Cook chicken in hot oil in a large nonstick skillet over medium-high heat, stirring occasionally, 6 to 7 minutes or until done.
- Stir together honey, soy sauce, garlic, and turmeric; add to skillet, and cook 2 to 3 minutes, stirring until sauce is thick and bubbly.
- Meanwhile, cook rice according to package directions; serve chicken and sauce over rice.
Side Dish Ingredients
- 1 (10-oz) pkg mixed baby greens
- 1 (16-oz) pkg organic strawberries, hulled and sliced
- ½ red onion, sliced
- ½ cup sliced almonds
- ⅓ cup organic balsamic vinaigrette
- ⅓ cup crumbled feta cheese
Side Dish Instructions
- Combine greens, strawberries, onion, and nuts in a bowl; add vinaigrette, and toss. Sprinkle with cheese.
