Turmeric-and Honey-Glazed Chicken

Ingredients

  • 2 lb boneless, skinless chicken thighs, cubed
  • ½ tsp salt
  • ¼ tsp pepper
  • 2 Tbsp olive oil
  • ¼ cup honey
  • 3 Tbsp low-sodium soy sauce
  • 1 Tbsp minced garlic
  • 1 tsp ground turmeric
  • 1 cup brown basmati rice, rinsed (or use other rice)

Instructions

  1. Sprinkle chicken thighs with salt and pepper. Cook chicken in hot oil in a large nonstick skillet over medium-high heat, stirring occasionally, 6 to 7 minutes or until done.
  2. Stir together honey, soy sauce, garlic, and turmeric; add to skillet, and cook 2 to 3 minutes, stirring until sauce is thick and bubbly.
  3. Meanwhile, cook rice according to package directions; serve chicken and sauce over rice.

  • 1 (10-oz) pkg mixed baby greens
  • 1 (16-oz) pkg organic strawberries, hulled and sliced
  • ½ red onion, sliced
  • ½ cup sliced almonds
  • ⅓ cup organic balsamic vinaigrette
  • ⅓ cup crumbled feta cheese

Side Dish Instructions

  1. Combine greens, strawberries, onion, and nuts in a bowl; add vinaigrette, and toss. Sprinkle with cheese.
