Walnut-Blueberry Cream Bars

Ingredients
- ⅔ cup very finely chopped walnuts
- ½ cup graham cracker crumbs
- ⅓ cup old-fashioned oats
- 3 Tbsp butter, melted
- 2 Tbsp sugar
- 1 (8-oz) block ⅓-less-fat cream cheese
- ⅓ cup sugar
- 1 Tbsp lemon juice
- ½ tsp vanilla extract
- ½ cup frozen (thawed) light whipped topping
- 2 Tbsp blueberry or apricot preserves
- 1½ cups fresh or frozen (thawed) blueberries
Instructions
- Preheat oven to 350°F. Combine nuts, graham cracker crumbs, oats, butter, and 2 Tbsp sugar until blended. Press firmly into bottom of an 8-x 8-inch baking dish coated with cooking spray.
- Bake 10 to 12 minutes or until edges are browned; cool on a wire rack.
- Beat cream cheese, ⅓ cup sugar, lemon juice, and vanilla until smooth; gently fold in whipped topping. Spread mixture over crust.
- Melt preserves in a glass bowl in microwave 10 to 20 seconds. Stir in blueberries, and spoon over filling.
- Chill until ready to serve. Cut into small bars; serve with forks.
