Walnut-Blueberry Cream Bars

Ingredients

  • ⅔ cup very finely chopped walnuts
  • ½ cup graham cracker crumbs
  • ⅓ cup old-fashioned oats
  • 3 Tbsp butter, melted
  • 2 Tbsp sugar
  • 1 (8-oz) block ⅓-less-fat cream cheese
  • ⅓ cup sugar
  • 1 Tbsp lemon juice
  • ½ tsp vanilla extract
  • ½ cup frozen (thawed) light whipped topping
  • 2 Tbsp blueberry or apricot preserves
  • 1½ cups fresh or frozen (thawed) blueberries

Instructions

  1. Preheat oven to 350°F. Combine nuts, graham cracker crumbs, oats, butter, and 2 Tbsp sugar until blended. Press firmly into bottom of an 8-x 8-inch baking dish coated with cooking spray.
  2. Bake 10 to 12 minutes or until edges are browned; cool on a wire rack.
  3. Beat cream cheese, ⅓ cup sugar, lemon juice, and vanilla until smooth; gently fold in whipped topping. Spread mixture over crust.
  4. Melt preserves in a glass bowl in microwave 10 to 20 seconds. Stir in blueberries, and spoon over filling.
  5. Chill until ready to serve. Cut into small bars; serve with forks.
