Ingredients

  • ¾ lb flank steak (or use skirt steak)
  • 1 Tbsp Montreal steak seasoning
  • 1 (5-oz) pkg spinach
  • 1 Roma tomato, chopped
  • ¼ cup thinly sliced red onion
  • 5 slices fully cooked bacon, reheated and crumbled
  • ⅓ cup red wine vinaigrette (or use honey Dijon dressing)

Instructions

  1. Preheat broiler. Sprinkle steak on both sides with seasoning, pressing to adhere. Place steak on a greased broiler pan.
  2. Broil 8 to 10 minutes or to desired doneness, turning once. Let stand 10 minutes before slicing across the grain. Chop slices, if desired.
  3. Meanwhile, combine spinach, tomato, onion, and bacon in a large bowl. Drizzle vinaigrette over salad, and toss. Top with steak; toss again.

Side Dish Ingredients

  • ½ cup shredded Parmesan cheese
  • 2 Tbsp butter, softened
  • ½ (16-oz) loaf French bread, halved lengthwise

Side Dish Instructions

  1. Preheat broiler. Stir together cheese and butter; spread on cut sides of bread on a baking sheet. Broil 1 to 2 minutes or until toasted. Cut into slices.
