Shepherd's Pie Mashed Potatoes

Ingredients

  • 1½ lb plant-based ground beef
  • 2 Tbsp olive oil
  • 1 (16-oz) pkg frozen mixed vegetables, thawed
  • 1 onion, chopped
  • ¾ tsp pepper
  • ¾ cup low-sodium vegetable broth
  • 1 (24-oz) pkg refrigerated mashed potatoes

Instructions

  1. Cook plant-based beef in hot oil in a large skillet over medium-high heat 6 minutes. Add vegetables, onion, and pepper; cook 8 minutes or until tender.
  2. Add broth; cook 3 minutes or until thickened.
  3. Meanwhile, cook potatoes according to package directions. Serve plant-based beef mixture over potatoes.
