Shepherd's Pie Mashed Potatoes
Ingredients
- 1½ lb plant-based ground beef
- 2 Tbsp olive oil
- 1 (16-oz) pkg frozen mixed vegetables, thawed
- 1 onion, chopped
- ¾ tsp pepper
- ¾ cup low-sodium vegetable broth
- 1 (24-oz) pkg refrigerated mashed potatoes
Instructions
- Cook plant-based beef in hot oil in a large skillet over medium-high heat 6 minutes. Add vegetables, onion, and pepper; cook 8 minutes or until tender.
- Add broth; cook 3 minutes or until thickened.
- Meanwhile, cook potatoes according to package directions. Serve plant-based beef mixture over potatoes.
