Creamy Sausage and Kale Soup

Ingredients

  • ½ lb ground Italian pork sausage
  • ¼ cup chopped onion
  • 1 stalk celery, sliced
  • 2 cloves garlic, minced
  • 1½ tsp olive oil
  • 2 cups low-sodium chicken broth
  • ½ (14.5-oz) can no-salt-added fire-roasted diced tomatoes
  • ½ (13.5-oz) can coconut milk
  • ¼ tsp crushed red pepper
  • 2 cups chopped kale

Instructions

  1. Brown sausage in a saucepan over medium-high heat. Drain, and set aside.
  2. Sauté onion, celery, and garlic in hot oil in same pan 4 minutes or until almost tender. Add broth, tomatoes, coconut milk, red pepper, and cooked sausage. Bring to a simmer, and cook 8 minutes.
  3. Stir in kale, and simmer 5 minutes or until kale is tender.

Side Dish Ingredients

  • 3 cups chopped romaine lettuce
  • 3 Tbsp Caesar dressing
  • 3 Tbsp freshly grated Parmesan cheese

Side Dish Instructions

  1. Toss together all ingredients in a bowl.
