Jalapeño-Cheddar Chicken

Ingredients

  • 1½ lb boneless, skinless chicken breasts
  • ¾ tsp ground cumin
  • ¾ tsp garlic powder
  • ½ tsp salt
  • ½ tsp pepper
  • 2 Tbsp olive oil, divided
  • 1 onion, diced
  • 2 jalapeño peppers, seeded and sliced
  • ¾ cup heavy cream
  • ¾ cup low-sodium chicken broth
  • 1 cup shredded Cheddar cheese

Instructions

  1. Sprinkle chicken with cumin, garlic powder, salt, and pepper. Cook chicken in 1 Tbsp hot oil in a large skillet over medium-high heat 3 minutes per side or until browned. Remove from heat; keep warm.
  2. Cook onion and jalapeños in 1 Tbsp hot oil over medium-high heat 5 minutes or until lightly browned.
  3. Reduce heat to medium; add cream, broth, and chicken to skillet; cook 4 minutes or until sauce thickens and chicken is done. Stir in cheese until melted.

  • 1 (24-oz) pkg refrigerated mashed potatoes
  • 1 (12-oz) pkg frozen green beans
  • ¾ tsp garlic powder
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Cook potatoes and green beans according to package directions. Toss beans with garlic powder, salt, and pepper in a bowl.
