Prosciutto and Fig Pizza

Ingredients

  • 1 (16-oz) ball bakery pizza dough
  • 2 Tbsp olive oil, divided
  • 1 onion, sliced
  • ¾ cup fig preserves
  • 3 cups baby arugula
  • 1 (4-oz) pkg thinly sliced prosciutto
  • ¾ cup shredded Parmesan cheese
  • ¾ cup crumbled goat cheese (or use gorgonzola cheese)

Instructions

  1. Preheat oven to 400°F. Roll out dough to a 16-inch round on a large greased baking sheet. Prick dough several times with a fork. Brush with 1 Tbsp oil; bake 6 minutes.
  2. Meanwhile, cook onion in 1 Tbsp hot oil in a large skillet over medium-high heat 5 minutes. Remove from heat.
  3. Spread preserves on partially-baked crust. Top with onion, arugula, prosciutto, and cheeses. Bake 8 to 10 minutes or until crust is browned and cheese is melted.
