Roasted Tomato-Burrata Pasta

Ingredients

  • 3 pints multicolored cherry tomatoes
  • ¼ cup olive oil
  • 4 cloves garlic, crushed
  • 2 tsp Italian seasoning
  • 1 tsp kosher salt
  • 1 tsp freshly ground pepper
  • 1 (16-oz) pkg tagliatelle pasta (or use fettuccine)
  • 1 (0.5-oz) pkg fresh basil, torn and divided
  • 2 (4-oz) balls burrata cheese, torn
  • 2 Tbsp balsamic glaze (or use balsamic vinegar)

Instructions

  1. Preheat oven to 400°F. Toss together tomatoes, oil, garlic, seasoning, salt, and pepper in a 13-x 9-inch baking dish. Roast 25 to 30 minutes or until tomatoes burst.
  2. Meanwhile, cook pasta according to package directions. Drain, reserving ¼ cup pasta water.
  3. Toss hot pasta, ½ pkg basil, and reserved pasta water with tomato mixture in baking dish.
  4. Top with cheese and remaining basil. Drizzle with balsamic glaze.
