Chicken Pesto Fettuccine

Ingredients

  • 1 (12-oz) pkg gluten-free fettuccine (or use spaghetti)
  • 2 lb boneless, skinless chicken breasts
  • ¼ tsp salt
  • ¼ tsp pepper
  • 3 Tbsp olive oil, divided
  • 1 pint grape tomatoes
  • 1 (6.5-oz) jar pesto
  • ¼ tsp crushed red pepper

Instructions

  1. Cook pasta according to package directions.
  2. Meanwhile, cut chicken into bite-size pieces; sprinkle with salt and pepper. Cook chicken in 2 Tbsp hot oil in a large nonstick skillet over medium-high heat 6 to 8 minutes or until browned and done. Remove from skillet.
  3. Cook tomatoes in 1 Tbsp hot oil in same skillet 6 to 7 minutes or until tomatoes begin to soften and burst. Return chicken to skillet; stir in pesto and red pepper; cook 2 minutes or until thoroughly heated, stirring often. Toss with hot pasta.

Side Dish Ingredients

  • 2 (10-oz) pkg chopped romaine lettuce
  • ½ cup gluten-free Caesar dressing
  • ¼ cup freshly grated Parmesan cheese
  • 1 (4-oz) pkg gluten-free seasoned croutons

Side Dish Instructions

  1. Toss together lettuce and dressing in a large bowl; sprinkle with cheese and croutons.
