Chicken Pesto Fettuccine
Simple Caesar Salad
Ingredients
- 1 (12-oz) pkg gluten-free fettuccine (or use spaghetti)
- 2 lb boneless, skinless chicken breasts
- ¼ tsp salt
- ¼ tsp pepper
- 3 Tbsp olive oil, divided
- 1 pint grape tomatoes
- 1 (6.5-oz) jar pesto
- ¼ tsp crushed red pepper
Instructions
- Cook pasta according to package directions.
- Meanwhile, cut chicken into bite-size pieces; sprinkle with salt and pepper. Cook chicken in 2 Tbsp hot oil in a large nonstick skillet over medium-high heat 6 to 8 minutes or until browned and done. Remove from skillet.
- Cook tomatoes in 1 Tbsp hot oil in same skillet 6 to 7 minutes or until tomatoes begin to soften and burst. Return chicken to skillet; stir in pesto and red pepper; cook 2 minutes or until thoroughly heated, stirring often. Toss with hot pasta.
Side Dish Ingredients
- 2 (10-oz) pkg chopped romaine lettuce
- ½ cup gluten-free Caesar dressing
- ¼ cup freshly grated Parmesan cheese
- 1 (4-oz) pkg gluten-free seasoned croutons
Side Dish Instructions
- Toss together lettuce and dressing in a large bowl; sprinkle with cheese and croutons.
