Sheet Pan Salmon, Potatoes, and Broccoli

Ingredients
- 1 head broccoli, cut into florets
- 1½ lb Yukon Gold potatoes, thinly sliced
- 1 red onion, cut into wedges
- ¼ cup olive oil, divided
- ½ tsp salt, divided
- ½ tsp pepper, divided
- 6 (6-oz) salmon fillets
- ¾ cup mayonnaise
- 3 Tbsp lemon juice
- 1 Tbsp chopped fresh rosemary
Instructions
- Preheat oven to 450°F. Toss together broccoli, potatoes, onion, 3 Tbsp oil, and ¼ tsp each salt and pepper on a large rimmed baking sheet; spread in a single layer.
- Bake 15 minutes. Carefully arrange fish over vegetables on baking sheet; brush with 1 Tbsp oil, and sprinkle with ¼ tsp each salt and pepper. Bake 8 to 10 minutes or until fish flakes with a fork.
- Stir together mayonnaise, lemon juice, and rosemary. Serve with fish and vegetables.
