Sheet Pan Salmon, Potatoes, and Broccoli

Ingredients

  • 1 head broccoli, cut into florets
  • 1½ lb Yukon Gold potatoes, thinly sliced
  • 1 red onion, cut into wedges
  • ¼ cup olive oil, divided
  • ½ tsp salt, divided
  • ½ tsp pepper, divided
  • 6 (6-oz) salmon fillets
  • ¾ cup mayonnaise
  • 3 Tbsp lemon juice
  • 1 Tbsp chopped fresh rosemary

Instructions

  1. Preheat oven to 450°F. Toss together broccoli, potatoes, onion, 3 Tbsp oil, and ¼ tsp each salt and pepper on a large rimmed baking sheet; spread in a single layer.
  2. Bake 15 minutes. Carefully arrange fish over vegetables on baking sheet; brush with 1 Tbsp oil, and sprinkle with ¼ tsp each salt and pepper. Bake 8 to 10 minutes or until fish flakes with a fork.
  3. Stir together mayonnaise, lemon juice, and rosemary. Serve with fish and vegetables.
