Goat Cheese Primavera Pizza
Ingredients
- 1 (1-lb) ball bakery pizza dough, at room temperature
- 3 Tbsp olive oil, divided
- 2 (4-oz) logs goat cheese, softened
- 1 cup Broccolini, cut into 1½-inch pieces (3 oz)
- ½ (10-oz) pkg zucchini noodles
- ½ cup cherry tomatoes (preferably multicolored), halved
- ¼ cup thinly sliced red onion
- ¼ cup sliced roasted red pepper
- 1 cup shredded whole-milk mozzarella cheese
- ¼ tsp kosher salt
- ¼ tsp freshly ground pepper
Instructions
- Preheat oven to 450°F. Roll out pizza dough into a 16-inch round on a greased baking sheet; prick dough all over with a fork. Brush with 1 Tbsp oil; sprinkle lightly with salt and pepper, if desired. Bake 8 minutes.
- Spread goat cheese over partially-baked crust; top with Broccolini, zucchini, tomatoes, onion, and red pepper; drizzle with 2 Tbsp oil. Sprinkle with mozzarella and ¼ tsp each salt and pepper.
- Bake 10 to 15 minutes or until crust is golden. Cut into 6 slices to serve.
