Sweet Potato-Beef Nachos

Ingredients

  • 1½ lb grass-fed ground beef
  • 3 cloves garlic, minced
  • 1 cup refrigerated salsa
  • 2 Tbsp salt-free Southwest seasoning
  • 1 pint grape tomatoes, quartered
  • 2 avocados, diced
  • ¼ cup chopped fresh cilantro
  • Sliced jalapeño peppers (optional)

Instructions

  1. Cook beef and garlic in a large skillet over medium heat until no longer pink; drain and return to skillet. Stir in salsa and seasoning. Cook, stirring, over medium heat until thickened.
  2. Arrange Sweet Potato Chips recipe on a large platter; spoon beef mixture over chips. Top with tomatoes, avocado, and cilantro; garnish with peppers, if desired.

Side Dish Ingredients

  • 3 large sweet potatoes
  • 3 Tbsp avocado oil
  • ¾ tsp salt
  • ¾ tsp pepper

Side Dish Instructions

  1. Preheat oven to 400°F. Using a mandoline or a sharp knife, thinly slice potatoes.
  2. Toss together potatoes and oil on rimmed baking sheets; arrange in a single layer on each baking sheet. Sprinkle with salt and pepper.
  3. Bake 25 to 35 minutes or until potatoes are crisp and edges are browned. Cool "chips" on wire racks.
