Sweet Potato-Beef Nachos
Sweet Potato ChipsIngredients
- 1½ lb grass-fed ground beef
- 3 cloves garlic, minced
- 1 cup refrigerated salsa
- 2 Tbsp salt-free Southwest seasoning
- 1 pint grape tomatoes, quartered
- 2 avocados, diced
- ¼ cup chopped fresh cilantro
- Sliced jalapeño peppers (optional)
Instructions
- Cook beef and garlic in a large skillet over medium heat until no longer pink; drain and return to skillet. Stir in salsa and seasoning. Cook, stirring, over medium heat until thickened.
- Arrange Sweet Potato Chips recipe on a large platter; spoon beef mixture over chips. Top with tomatoes, avocado, and cilantro; garnish with peppers, if desired.
Side Dish Ingredients
- 3 large sweet potatoes
- 3 Tbsp avocado oil
- ¾ tsp salt
- ¾ tsp pepper
Side Dish Instructions
- Preheat oven to 400°F. Using a mandoline or a sharp knife, thinly slice potatoes.
- Toss together potatoes and oil on rimmed baking sheets; arrange in a single layer on each baking sheet. Sprinkle with salt and pepper.
- Bake 25 to 35 minutes or until potatoes are crisp and edges are browned. Cool "chips" on wire racks.
