Meat Loaf Burgers
Skillet BroccoliniIngredients
- 2 lb grass-fed ground beef
- 2 large eggs, lightly beaten
- 2 cloves garlic, minced
- ½ tsp salt
- ½ tsp pepper
- 12 large romaine lettuce leaves
- ½ cup thinly sliced onion
- 6 stacker sliced dill pickles
- Natural ketchup (such as Tessemae's)
Instructions
- Preheat oven to 450°F. Combine beef, eggs, garlic, salt, and pepper; mix just until combined. Shape beef mixture into 12 patties; place on a baking sheet.
- Bake 10 minutes or until done, turning once during cooking.
- Arrange lettuce in stacks of 2 leaves each; top each with a 2 burger patties, onion, pickle, and ketchup; roll up to serve.
Side Dish Ingredients
- 2 lb Broccolini, trimmed (or use broccoli florets)
- ½ tsp salt
- ¼ tsp crushed red pepper
- 1 Tbsp avocado oil
- 2 Tbsp red wine vinegar
Side Dish Instructions
- Cook Broccolini, salt, and red pepper in hot oil in a large skillet over medium-high heat, stirring, 5 minutes or until Broccolini is just tender. Stir in vinegar.
