Meat Loaf Burgers

Ingredients

  • 2 lb grass-fed ground beef
  • 2 large eggs, lightly beaten
  • 2 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp pepper
  • 12 large romaine lettuce leaves
  • ½ cup thinly sliced onion
  • 6 stacker sliced dill pickles
  • Natural ketchup (such as Tessemae's)

Instructions

  1. Preheat oven to 450°F. Combine beef, eggs, garlic, salt, and pepper; mix just until combined. Shape beef mixture into 12 patties; place on a baking sheet.
  2. Bake 10 minutes or until done, turning once during cooking.
  3. Arrange lettuce in stacks of 2 leaves each; top each with a 2 burger patties, onion, pickle, and ketchup; roll up to serve.

Side Dish Ingredients

  • 2 lb Broccolini, trimmed (or use broccoli florets)
  • ½ tsp salt
  • ¼ tsp crushed red pepper
  • 1 Tbsp avocado oil
  • 2 Tbsp red wine vinegar

Side Dish Instructions

  1. Cook Broccolini, salt, and red pepper in hot oil in a large skillet over medium-high heat, stirring, 5 minutes or until Broccolini is just tender. Stir in vinegar.
