Garlic-Rosemary Flank Steak
Lemony Mashed CauliflowerIngredients
- 2 Tbsp avocado oil
- 2 Tbsp chopped fresh rosemary
- ½ tsp kosher salt
- ½ tsp black pepper
- ¼ tsp crushed red pepper
- 2 lb flank steak, trimmed
- 1 clove garlic, halved
Instructions
- Preheat broiler. Combine oil, rosemary, salt, and both peppers in a small bowl. Rub mixture over steak on a broiler pan rubbed with olive oil.
- Broil 5 minutes; rub firmly with cut sides of garlic, then turn steak. Broil 5 minutes longer or to desired doneness. Let stand 10 minutes before slicing thinly across the grain.

- 2 Tbsp ghee
- 1 large onion, chopped
- 2 cloves garlic, minced
- ¾ cup low-sodium organic chicken broth
- 1 (16-oz) pkg frozen cauliflower florets
- 2 Tbsp chopped fresh parsley
- 1 tsp lemon zest
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Heat ghee in a large skillet over medium-high heat. Add onion and garlic; cook 5 minutes or until onion is tender, stirring occasionally. Add broth and cauliflower.
- Bring to a boil; reduce heat, cover and simmer 15 minutes or until cauliflower is tender. Remove from heat.
- Mash cauliflower with a potato masher. Stir in parsley, lemon zest, salt, and pepper.
