Garlic-Rosemary Flank Steak

Ingredients

  • 2 Tbsp avocado oil
  • 2 Tbsp chopped fresh rosemary
  • ½ tsp kosher salt
  • ½ tsp black pepper
  • ¼ tsp crushed red pepper
  • 2 lb flank steak, trimmed
  • 1 clove garlic, halved

Instructions

  1. Preheat broiler. Combine oil, rosemary, salt, and both peppers in a small bowl. Rub mixture over steak on a broiler pan rubbed with olive oil.
  2. Broil 5 minutes; rub firmly with cut sides of garlic, then turn steak. Broil 5 minutes longer or to desired doneness. Let stand 10 minutes before slicing thinly across the grain.

  • 2 Tbsp ghee
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • ¾ cup low-sodium organic chicken broth
  • 1 (16-oz) pkg frozen cauliflower florets
  • 2 Tbsp chopped fresh parsley
  • 1 tsp lemon zest
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Heat ghee in a large skillet over medium-high heat. Add onion and garlic; cook 5 minutes or until onion is tender, stirring occasionally. Add broth and cauliflower.
  2. Bring to a boil; reduce heat, cover and simmer 15 minutes or until cauliflower is tender. Remove from heat.
  3. Mash cauliflower with a potato masher. Stir in parsley, lemon zest, salt, and pepper.
