Spicy Roasted Carrots

Ingredients

  • 1½ lb flank steak, trimmed (or use top sirloin)
  • 4 cloves garlic, minced
  • ½ cup fresh orange juice
  • ¼ cup fresh lemon juice
  • ⅓ cup coconut aminos
  • 1 cup chopped fresh cilantro
  • 1 Tbsp chili powder
  • 1 Tbsp ground cumin
  • ¼ cup avocado oil
  • 2 avocados, sliced
  • 1 (16-oz) container refrigerated salsa

Instructions

  1. Place steak in a large zip-top plastic freezer bag.
  2. Whisk together garlic and next 7 ingredients; reserve ½ cup marinade. Pour remaining marinade over steak; seal and chill 8 hours or overnight.
  3. Remove steak from marinade; sprinkle steak lightly with salt and pepper.
  4. Heat a greased cast-iron skillet or grill pan over medium-high heat; add steak. Cook 6 minutes per side or to desired doneness; let steak stand 10 minutes before thinly slicing across the grain.
  5. Serve with reserved ½ cup marinade, sliced avocado, and salsa.

  • 2 (12-oz) pkg rainbow baby carrots, halved lengthwise
  • 2 Tbsp avocado oil
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Preheat oven to 425°F. Combine carrots, oil, cumin, chili powder, salt, and pepper on a rimmed baking sheet. Toss.
  2. Bake 25 minutes or until tender and browned, stirring once.
