Carne Asada
Spicy Roasted Carrots
Ingredients
- 1½ lb flank steak, trimmed (or use top sirloin)
- 4 cloves garlic, minced
- ½ cup fresh orange juice
- ¼ cup fresh lemon juice
- ⅓ cup coconut aminos
- 1 cup chopped fresh cilantro
- 1 Tbsp chili powder
- 1 Tbsp ground cumin
- ¼ cup avocado oil
- 2 avocados, sliced
- 1 (16-oz) container refrigerated salsa
Instructions
- Place steak in a large zip-top plastic freezer bag.
- Whisk together garlic and next 7 ingredients; reserve ½ cup marinade. Pour remaining marinade over steak; seal and chill 8 hours or overnight.
- Remove steak from marinade; sprinkle steak lightly with salt and pepper.
- Heat a greased cast-iron skillet or grill pan over medium-high heat; add steak. Cook 6 minutes per side or to desired doneness; let steak stand 10 minutes before thinly slicing across the grain.
- Serve with reserved ½ cup marinade, sliced avocado, and salsa.
Side Dish Ingredients
- 2 (12-oz) pkg rainbow baby carrots, halved lengthwise
- 2 Tbsp avocado oil
- 1 tsp ground cumin
- 1 tsp chili powder
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Preheat oven to 425°F. Combine carrots, oil, cumin, chili powder, salt, and pepper on a rimmed baking sheet. Toss.
- Bake 25 minutes or until tender and browned, stirring once.
