Ingredients

  • ½ lb ground beef
  • 1 (14.5-oz) can petite-diced tomatoes
  • 2 cups low-sodium chicken broth
  • 1 (15-oz) can black beans, drained and rinsed (or use kidney beans)
  • 1 cup canned drained whole kernel corn
  • ½ (1-oz) envelope low-sodium taco seasoning mix
  • ½ (1-oz) envelope Ranch dressing mix
  • ½ cup sour cream

Instructions

  1. Cook beef in a Dutch oven over medium-high heat until beef is browned and crumbly; drain and return to pot. Add remaining ingredients except sour cream.
  2. Bring to a boil; reduce heat, and simmer 20 minutes. Top each serving with sour cream.

  • ½ (11-oz) pkg tortilla chips

Side Dish Instructions

  1. Serve chips with soup.
