Santa Fe Soup
Tortilla Chips
Ingredients
- ½ lb ground beef
- 1 (14.5-oz) can petite-diced tomatoes
- 2 cups low-sodium chicken broth
- 1 (15-oz) can black beans, drained and rinsed (or use kidney beans)
- 1 cup canned drained whole kernel corn
- ½ (1-oz) envelope low-sodium taco seasoning mix
- ½ (1-oz) envelope Ranch dressing mix
- ½ cup sour cream
Instructions
- Cook beef in a Dutch oven over medium-high heat until beef is browned and crumbly; drain and return to pot. Add remaining ingredients except sour cream.
- Bring to a boil; reduce heat, and simmer 20 minutes. Top each serving with sour cream.

Side Dish Instructions
- Serve chips with soup.
