Indian-Spiced Beef Short Ribs

Ingredients

  • 3½ lb boneless beef short ribs
  • ¾ tsp salt
  • ¾ tsp pepper
  • 3 Tbsp garam masala
  • 3 Tbsp olive oil
  • 3 carrots, sliced
  • 2 onions, cut into wedges
  • 3 cloves garlic, smashed
  • 1½ tsp ground ginger
  • 1 (32-oz) carton low-sodium beef broth

Instructions

  1. Sprinkle ribs with salt and pepper; rub with garam masala.
  2. Cook ribs in hot oil in a large, deep skillet over medium-high heat 2 to 3 minutes per side or until browned. Transfer to a 5- or 6-quart slow cooker.
  3. Sauté carrots, onions, garlic, and ginger in skillet over medium heat 3 minutes or until beginning to brown.
  4. Add 1 cup broth, scraping skillet to loosen browned bits; pour over ribs in cooker. Add 3 cups broth.
  5. Cover and cook on LOW 7 hours or until meat is tender.

  • 2 lb sweet potatoes, peeled and coarsely chopped
  • ¼ cup (or more) unsweetened coconut milk
  • ¾ tsp salt
  • ¾ tsp pepper

Side Dish Instructions

  1. Combine potatoes and water to cover in a large saucepan. Bring to a boil over medium-high heat; reduce heat, and simmer 10 to 15 minutes or until tender. Drain and return to pan.
  2. Add coconut milk, salt, and pepper; mash to desired consistency.
