Ziti with Italian Sausage
Italian Vegetable Saute
Ingredients
- ½ lb ground Italian sausage
- ½ cup chopped onion
- 1 clove garlic, minced
- 1¼ cups marinara sauce
- 6 oz ziti pasta
- ½ (15-oz) carton ricotta cheese
- 1 large egg yolk
- ¾ cup shredded mozzarella cheese, divided
- ½ cup shredded Parmesan cheese, divided
Instructions
- Cook sausage, onion, and garlic in a large skillet over medium heat until sausage is browned; drain.
- Add marinara sauce and sausage mixture to a lightly greased 3- to 4-quart slow cooker. Cover and cook on LOW 4 hours.
- Meanwhile, cook pasta according to package directions.
- Stir together ricotta, egg yolk, ¼ cup mozzarella, and ¼ cup Parmesan in a bowl.
- Stir pasta and ricotta mixture into sauce in slow cooker. Sprinkle with ½ cup mozzarella and ¼ cup Parmesan. Cook 30 minutes or until cheese melts and pasta is thoroughly heated.
Side Dish Ingredients
- 1 small zucchini
- 1 small yellow squash
- 1 cup halved grape tomatoes
- 1 Tbsp olive oil
- ½ tsp Italian seasoning
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Cut zucchini and squash crosswise into 3 pieces; cut pieces lengthwise into 1-inch-thick wedges.
- Cook zucchini and squash in hot oil in a large skillet over medium-high heat 4 minutes or until tender.
- Add tomatoes; cook 2 minutes or until tender. Stir in Italian seasoning, salt, and pepper.
