Ziti with Italian Sausage

Ingredients

  • ½ lb ground Italian sausage
  • ½ cup chopped onion
  • 1 clove garlic, minced
  • 1¼ cups marinara sauce
  • 6 oz ziti pasta
  • ½ (15-oz) carton ricotta cheese
  • 1 large egg yolk
  • ¾ cup shredded mozzarella cheese, divided
  • ½ cup shredded Parmesan cheese, divided

Instructions

  1. Cook sausage, onion, and garlic in a large skillet over medium heat until sausage is browned; drain.
  2. Add marinara sauce and sausage mixture to a lightly greased 3- to 4-quart slow cooker. Cover and cook on LOW 4 hours.
  3. Meanwhile, cook pasta according to package directions.
  4. Stir together ricotta, egg yolk, ¼ cup mozzarella, and ¼ cup Parmesan in a bowl.
  5. Stir pasta and ricotta mixture into sauce in slow cooker. Sprinkle with ½ cup mozzarella and ¼ cup Parmesan. Cook 30 minutes or until cheese melts and pasta is thoroughly heated.

Side Dish Ingredients

  • 1 small zucchini
  • 1 small yellow squash
  • 1 cup halved grape tomatoes
  • 1 Tbsp olive oil
  • ½ tsp Italian seasoning
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Cut zucchini and squash crosswise into 3 pieces; cut pieces lengthwise into 1-inch-thick wedges.
  2. Cook zucchini and squash in hot oil in a large skillet over medium-high heat 4 minutes or until tender.
  3. Add tomatoes; cook 2 minutes or until tender. Stir in Italian seasoning, salt, and pepper.
