Lemony Asparagus with Goat Cheese

Ingredients

  • 1½ lb New York strip steaks
  • 2 Tbsp olive oil
  • 2 cloves garlic, minced
  • ¼ cup balsamic vinegar
  • 1 tsp Worcestershire sauce
  • ¼ tsp salt
  • ⅛ tsp pepper
  • 2 Tbsp melted butter, divided

Instructions

  1. Place steaks in a large zip-top bag. Whisk oil, garlic, vinegar, Worcestershire sauce, salt, and pepper in a small bowl. Pour marinade over steaks; seal and turn bag several times to coat. Chill at least 30 minutes or overnight.
  2. Remove steaks, discarding any leftover marinade. Cook steak in 1 Tbsp melted butter in a large nonstick skillet over medium-high heat 5 minutes per side or to desired doneness. Let stand 5 minutes; drizzle with 1 Tbsp butter, and slice.

  • 1 lb asparagus, trimmed
  • 2 Tbsp olive oil 
  • 1 tsp lemon zest
  • ½ Tbsp fresh lemon juice
  • ¼ tsp salt
  • ⅛ tsp pepper
  • ½ (4-oz) log goat cheese, crumbled

Side Dish Instructions

  1. Steam asparagus in a steamer basket over simmering water 3 to 5 minutes or until crisp-tender.
  2. Whisk oil, zest, juice, salt, and pepper in a small bowl. Arrange asparagus on a platter; drizzle with oil mixture. Sprinkle with cheese.
