Dirty Rice Cauliflower Bowls

Ingredients
- 2 (10-oz) pkg frozen riced cauliflower
- ¼ cup melted butter, divided
- 2 Tbsp olive oil
- 1 red bell pepper, chopped
- ½ onion, diced
- 1 stalk celery, chopped
- 1½ lb ground pork sausage
- 2 tsp Cajun seasoning
- 1 green onion, chopped
Instructions
- Cook cauliflower rice according to package directions; drain and drizzle with 2 Tbsp butter.
- Meanwhile, heat oil with 2 Tbsp butter in a large skillet over medium-high heat. Add bell pepper, onion, and celery; cook 3 to 5 minutes or until vegetables are tender.
- Add sausage and seasoning; cook 5 to 6 minutes or until sausage is browned and crumbly. Stir in cauliflower; cook 3 minutes or until browned; stir in green onion.
