Salmon with Creamy Spinach and Artichokes

Ingredients

  • 6 (4-oz) salmon fillets
  • ¼ tsp kosher salt
  • ¼ tsp pepper
  • 1 (12-oz) jar marinated artichoke hearts, drained and chopped
  • 1 Tbsp olive oil
  • 1 (10-oz) pkg frozen chopped spinach, thawed and squeezed dry
  • 1 (8-oz) carton crème fraîche
  • ¾ cup freshly grated Parmesan cheese
  • 1 tsp garlic powder

Instructions

  1. Preheat oven to 450°F. Place fish on a greased baking sheet; sprinkle with salt and pepper. Bake 15 minutes or until fish flakes with a fork.
  2. Meanwhile, cook artichokes in hot oil in a large skillet over medium-high heat 2 minutes. Add spinach; cook 2 minutes. Stir in crème fraîche, Parmesan, and garlic powder. Cook until blended and creamy. Serve with fish.

  • ½ tsp garlic powder

  • ½ (13-oz) whole wheat French baguette

Side Dish Instructions

  1. Whisk together oil, basil, garlic powder, salt, and pepper in a small bowl.
  2. Heat bread in oven alongside fish. Slice bread, and serve with flavored oil.
