Sausage and Tomato-Zucchini Breakfast Skillet
Poached Eggs
Ingredients
- ½ lb lean ground turkey breakfast sausage
- 1 cup finely chopped onion
- 1 Tbsp olive oil
- 1 pint grape tomatoes, halved
- 1 large zucchini, halved and sliced
- 2 cloves garlic, minced
- 1 tsp dried oregano
- ½ tsp pepper
Instructions
- Cook sausage and onion in hot oil in a large nonstick skillet over medium heat 10 minutes or until sausage is browned and crumbly. Drain, if needed.
- Add tomatoes, zucchini, garlic, oregano, and pepper to skillet; cook 3 to 4 minutes or until vegetables are tender.
Side Dish Ingredients
- 1½ tsp white vinegar
- 4 large eggs
- ⅛ tsp salt
- ⅛ tsp pepper
Side Dish Instructions
- Fill a large skillet about two-thirds full with water; add vinegar. Bring to a boil. Reduce heat to a simmer.
- Crack 4 eggs into skillet about 2 inches apart; cook 3 minutes or to desired doneness. Remove eggs using a slotted spoon. Season with salt and pepper.
