Sausage and Tomato-Zucchini Breakfast Skillet

Ingredients

  • ½ lb lean ground turkey breakfast sausage
  • 1 cup finely chopped onion
  • 1 Tbsp olive oil
  • 1 pint grape tomatoes, halved
  • 1 large zucchini, halved and sliced
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • ½ tsp pepper

Instructions

  1. Cook sausage and onion in hot oil in a large nonstick skillet over medium heat 10 minutes or until sausage is browned and crumbly. Drain, if needed.
  2. Add tomatoes, zucchini, garlic, oregano, and pepper to skillet; cook 3 to 4 minutes or until vegetables are tender.

  • 1½ tsp white vinegar
  • 4 large eggs
  • ⅛ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Fill a large skillet about two-thirds full with water; add vinegar. Bring to a boil. Reduce heat to a simmer.
  2. Crack 4 eggs into skillet about 2 inches apart; cook 3 minutes or to desired doneness. Remove eggs using a slotted spoon. Season with salt and pepper.
