Blackberry-Amaretto Bellini

Ingredients

  • 1 (6-oz) pkg blackberries
  • ⅓ cup sugar
  • ½ cup water
  • 1 (750-ml) bottle Prosecco
  • 2 Tbsp amaretto
  • Garnish: additional blackberries

Instructions

  1. Place blackberries in a saucepan; muddle. Add sugar and water, stirring to combine.
  2. Bring blackberry mixture to a boil, reduce heat, and simmer 5 minutes. Remove from heat, and cool 15 minutes. Strain mixture, discarding solids. Cover remaining syrup (makes about ¾ cup), and chill up to 2 weeks.
  3. Add 2 Tbsp blackberry syrup to each of 6 champagne flutes; top each with Prosecco and 1 tsp amaretto. Garnish, if desired.
