Ingredients

  • 2 (15-oz) pkg Italian-style beef roast au jus
  • 2 (24-oz) pkg refrigerated garlic mashed potatoes
  • 1 (10-oz) pkg frozen mixed vegetables
  • 1 cup shredded mild Cheddar cheese

Instructions

  1. Preheat oven to 450°F. Cook roast according to package directions in microwave.
  2. Cook potatoes according to package directions. Cook vegetables according to package directions.
  3. Break up roast into chunks; toss with vegetables and desired amount of au jus in a bowl. Spoon into a greased 2-quart baking dish. Spread potatoes over filling; sprinkle with cheese. Bake 10 minutes.

Side Dish Ingredients

  • 1 Tbsp butter
  • 2 (15-oz) cans fried apples with cinnamon
  • 1 Tbsp brown sugar
  • ½ cup granola

Side Dish Instructions

  1. Melt butter in a large nonstick skillet over medium-high heat. Add apples and brown sugar. Cook 8 to 10 minutes or until syrupy and thick.
  2. Sprinkle with granola before serving.
