Almond, Chocolate, and Cherry Bars

Ingredients
- 1 cup pitted dates
- ½ cup dried cherries (or use dried cranberries)
- ⅓ cup unsweetened baking cocoa
- ⅓ cup chia seeds
- 1 tsp vanilla extract
- ⅛ tsp salt
- 1 cup whole almonds, coarsely chopped
Instructions
- Process dates in a food processor until a paste forms and dates clump together.
- Add cherries, cocoa, chia seeds, vanilla, and salt; pulse until combined. Add nuts; pulse until nuts are finely chopped and blended.
- Transfer date mixture to a large sheet of parchment paper; press into a ½-inch-thick rectangle. Wrap tightly, and chill overnight.
- Unwrap; cut into 8 bars. Store any leftover bars in refrigerator up to 3 days.
