Sweet Italian "Sausage" and Cauliflower Bake

Ingredients

  • 2 (12-oz) pkg cauliflower florets
  • 1 (14-oz) pkg plant-based sweet Italian sausage links, casings removed
  • 1 cup chopped onion
  • 3 cloves garlic, minced
  • 2 Tbsp olive oil
  • 1½ cups no-sugar-added marinara sauce
  • ¼ cup pitted kalamata olives, coarsely chopped
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat oven to 400°F. Cook cauliflower according to package directions.
  2. Meanwhile, cook sausage, onion, and garlic in hot oil in a large skillet over medium-high heat 4 to 6 minutes or until sausage is browned and crumbly.
  3. Stir in cauliflower, marinara sauce, and olives. Spoon into a lightly greased 13- x 9-inch baking dish. Top with cheese.
  4. Bake 18 to 20 minutes or until thoroughly heated.

  • ½ cup balsamic vinaigrette

Side Dish Instructions

  1. Toss together salad and vinaigrette just before serving.
