Sweet Italian "Sausage" and Cauliflower Bake
Quick Italian Salad
Ingredients
- 2 (12-oz) pkg cauliflower florets
- 1 (14-oz) pkg plant-based sweet Italian sausage links, casings removed
- 1 cup chopped onion
- 3 cloves garlic, minced
- 2 Tbsp olive oil
- 1½ cups no-sugar-added marinara sauce
- ¼ cup pitted kalamata olives, coarsely chopped
- 1 cup shredded mozzarella cheese
Instructions
- Preheat oven to 400°F. Cook cauliflower according to package directions.
- Meanwhile, cook sausage, onion, and garlic in hot oil in a large skillet over medium-high heat 4 to 6 minutes or until sausage is browned and crumbly.
- Stir in cauliflower, marinara sauce, and olives. Spoon into a lightly greased 13- x 9-inch baking dish. Top with cheese.
- Bake 18 to 20 minutes or until thoroughly heated.

- ½ cup balsamic vinaigrette
Side Dish Instructions
- Toss together salad and vinaigrette just before serving.
