Smoked Sausage Mac and Cheese

Ingredients

  • 1 (16-oz) pkg elbow macaroni
  • ¼ cup butter
  • 1 (16-oz) pkg smoked sausage, sliced
  • ⅓ cup all-purpose flour
  • 3 cups milk
  • 1 (8-oz) block mozzarella cheese, shredded
  • 1 (8-oz) block Cheddar cheese, shredded

Instructions

  1. Preheat oven to 350°F. Cook pasta according to package directions.
  2. Meanwhile, melt butter in a large saucepan over medium heat; add sausage, and cook until browned. Remove sausage from skillet with a slotted spoon, reserving drippings in skillet.
  3. Whisk in flour to reserved drippings, and cook, whisking constantly, 2 minutes. Gradually whisk in milk; cook, whisking occasionally, until thickened and bubbly. Remove from heat, and whisk in mozzarella until melted. Stir in cooked pasta and sausage.
  4. Spoon half of mixture into a lightly greased 3-quart baking dish or cast-iron skillet. Top with 1 cup Cheddar. Spoon remaining pasta mixture over cheese.
  5. Bake 25 minutes or until hot and bubbly; sprinkle with 1 cup Cheddar. Bake 5 minutes longer or until cheese melts.
